Green Tea Granita

Cool down and chill out this summer with green tea granita. Make with green tea, caster sugar, lemon juice and then freeze. When ready, serve in glasses and decorate with swirls of lemon rind.

Ingredients

 

    • 175g caster sugar

 

    • Thinly pared rind and juice of 1 lemon

 

    • 6 green tea bags

 

    • Lemon rind, for decoration

 

 

Method

 

 

    1. Pour 900ml water into a pan and add the sugar and lemon rind. Bring to the boil, stirring until the sugar dissolves. Remove the pan from the heat and add the tea bags. Stir in the lemon juice.

 

    1. Strain the mixture into a freezer-proof container to remove the tea bags and lemon peel. Freeze until crystals start to form around the edge of the container. Beat the mixture well and return it to the freezer. Freeze it, beating it occasionally, until it’s like crushed ice and then serve it. Alternatively, allow it to freeze completely and then remove it from the freezer and allow it to soften slightly, then scrape it out of the container to give a crushed ice texture. Serve piled into glasses, decorated with swirls of lemon rind.
