Stuffed crust sharing pizza

Save money and impress friends by making your very own stuffed crust pizza to share. Make your own dough and top with as many toppings as you like!

Ingredients

For the pizza base:

    • 300g plain strong flour

 

    • 60g butter or margarine

 

    • 1 level tsp salt

 

    • 7g sachet quick-action dried yeast

 

    • 150g mature Cheddar cheese, grated

 

For the tomato sauce (makes 300ml – use 100ml for the pizza):

    • 1 tbsp olive oil

 

    • 1 onion, peeled and finely chopped

 

    • 1 clove garlic, peeled and chopped

 

    • 400g can plum tomatoes

 

    • Handful of basil leaves

 

    • Salt and ground black pepper

 

For the toppings:

    • 2 slices ham, cut into strips

 

    • 1 large mushroom, chopped

 

    • 1 cooked chicken breast, finely chopped

 

    • 90g sweetcorn, canned or frozen

 

    • 60g mozzarella cheese

 

    • 4-6 cherry tomatoes, sliced

 

    • Handful of basil leaves

 

 

Method

 

 

    1. Make the dough and leave it to prove for 20-30 mins.

 

    1. To make the tomato sauce: Heat the oil in a frying pan, add the onion and garlic and fry them over a low heat for 10 mins, until the onion is softened. Pour in the tomatoes, add torn basil leaves and simmer for 10 mins. Whizz with a stick blender to make a nice, thick sauce. Season.

 

    1. When the dough has doubled in size, knock it back, then roll it out to a large circle and put on a heavy baking sheet. Spoon some grated cheese round the edge and roll the dough over to enclose it to make a stuffed crust. Spread a third of the tomato sauce inside on the base. Sprinkle with the rest of the cheese.

 

    1. Add the toppings in sections: ham and mushroom in one, chicken and sweetcorn in another and mozzarella, cherry tomatoes and torn basil on the last section.

 

    1. Cover with oiled cling film. Leave in a warm place to rise while the oven heats up. Set the oven to 220°C/425°F/Gas Mark 7. Take off cling film and bake the pizza for 20-25 mins.
