Classic accompaniment to turkey for your Christmas day meal (or any other time of the year), this couldn’t be easier to make.

  • 300ml (½ pint) milk
  • 1 small onion, chopped
  • 4-6 whole cloves
  • 1 bay leaf
  • 125g (4oz) brown breadcrumbs
  • Knob of butter
  • Salt and ground black pepper


  1. Pour the milk into a saucepan and add onion, cloves and bay leaf. Place over a medium heat and bring to the boil, then reduce heat to very low and simmer for about 10 minutes, until onion has started to soften.
  2. Add breadcrumbs to pan and cook for a further 5 minutes, or until sauce has thickened, stirring it occasionally so that it doesn’t stick to pan. Stir in butter and seasoning to taste. Keep warm until serving.

Not suitable for freezing.

To prepare in advance: The milk may be infused as in Step 1, then cooled and chilled overnight.
