- 8 baked sweet pastry cases
- 2 x 200g punnets raspberries
- 1 small jar lemon curd
Method
- Pack the pastry cases and raspberries well to protect them for taking on a picnic. Take the jar of lemon curd and a spoon.
- To serve: Spread 2 tbsp of lemon curd into each pastry case and arrange raspberries on top. The tarts can be assembled and chilled for up to a day for eating at home.
